Recipe Post No.25- Chocolate Chip Cookies πŸͺ🍫 + photos of Raspberry Cupcakes

Hola a todos!

Firstly, thanks to those who viewed my last post. πŸ˜˜πŸ’‹

For a change, I'm not going to start this week's post with an apologize for not uploading my photos. Long story short, I haven't managed to get into the swing of the new school term. Needless to say,  but I will do,eventually.

This week's recipe is one of the most typical sweet treats to bake at this time of year- yes, it's your classic-chocolate chip cookieπŸ˜ŠπŸ˜‹(better than the ones you buy in the supermarket
bakery). Alongside sharing this week 's recipe and photos,I'll also be uploading photos of my cupcakes. Without further ado, let's jump right into the recipe✌:

In order to concoct this healthier version of chocolate chip cookies,you'll require the following:


  • 100g of caster sugar
  • 220g of dark,soft brown sugar 
  • 1½ tsps of vanilla extract
  • 2 egg whites
  • 220g of plain flour
  •  1 tsp of bicarbonate of soda
  •  ½ tsp of salt
  • 40g of porridge oats
  • 70g of plain chocolate,chopped(I like to use plain dark chocolate but whatever you prefer would be best)  
 Method:

As always, pre-heat your ovens to 180℃/160℃/ Gas Mark 4.

In a rather sizable bowl, cream together the margarine,water, caster sugar and dark soft brown sugar until smooth. 

Withal, beat in the egg whites and the vanilla. 

Subsequent to this, combine the flour, bicarbonate of soda and salt and stir this into the creamed mixture.

Blend in the oats and chopped chocolate. Drop the dough in half-teaspoonfuls onto lined baking trays. 

Bake this in the oven for approximately 7-9 minutes until the edges begin to brown. 

Eventually, once the cookies baking time is complete, remove the cookies from the baking trays to cool on the wire rack.

Cool for at least 10 minutes before eating with preferably milk,or maple syrup, if you're feeling really Autumn-y.

Baking Post N0.17- Recipe Compilation post PT.2

Hola a todas!!

Happy Half Term holiday! I hope you are happy and well and making the most of the....reasonable weather over the holiday! I'm back with good news... after weeks of waiting, I finally have those photos of the Carrot Cake Cookies which I'm taking the opportunity to share with you on a fresh page and new intentions. As you all know, this is the start of a new month and for me that means another chance at starting my life on WHOLE new level(well that's what I've been telling myself at the start of every month for 6 months). Likewise, there are ADJUSTMENTS I'll like to make to my blog layout, and to my scheduling and selection of recipe posts. However, I'll take the opportunity to go more in depth into this in a later blog post. Without further ado, here are the snapshots of those delicious carrot cake cookies!

Recipe Post 2017 N0.14- The Cookie Club

Hello world!

Transiently, I have taken a fancy in improving and adapting my expected baking posts. Don't take this the wrong way,I take very much delight in composing posts where I write up recipes of my pick, bake them and display them for all of you to view. For example, my last post was very enjoyable and I derive great pleasure from arranging big bake-offs,exhibiting the finale in a  different manner to what I'm accustomed to. However, I less occupied with schoolwork as I'm on vacation,giving me more excuse to bake.  With that,I have created Cookie Club!!The cookie club is devised of  my favored cookie recipes, at the moment being three. To clarify the constituents of the club, each member (cookie) shall hold its own nickname and individual photo shoot,suitable to all occasions.  Without any further ado, let's dive straight into the recipes!

My first and foremost cookie recipe is Chocolate Dipped Strawberry cookies. You'll need:

210g of unsalted butter

330g of light brown sugar

1 large eggs

1 teaspoon of vanilla essence

390g of plain flour

2tsps bicarbonate soda

100g of strawberries,hulled and roughly chopped


Baking in the making:

Preheat oven to 170 C/150 C/ Gas Mark 4.

Cream together the butter and sugar until light and fluffy.Incorporate the egg and the vanilla essence,mixing well. Fold in the chocolate chips and strawberries (leave a few aside to press into the top of the cookies).

Roll the dough into balls(approx 2 tables per cookie). Press gently with your palms so they are slightly flattened, and press some extra chocolate chips and/or strawberries on top.Place on lined baking tray-be sure to space them out as they enlarge in size when being baked. Bake in the oven for 17 minutes.

Allow to cool for a few minutes on the tray before transferring to a cooling rack,allowing them to cool completely.

Melt the chocolate,dipping half the cookie into the chocolate. Rest the cookies on non-stick paper, garnishing cookies with sprinkles, if desired.  Here, I bring to you Strawberry Sprinkle!

To accompany Strawberry Sprinkle in the Cookie Club is Wild Blueberry Oatmeal Cookies, a MORNING delight:

2 medium bananas,mashed

162 grams of rolled oats

24 grams of plain flour

10g of dried blueberries

54 grams of coconut oil,melted

1/8 of teaspoon of salt

2 tablespoons of honey

2 tablespoons of chia/hemp seeds

Method:

Preheat the oven to 180 C/ 160 C fan/ Gas Mark.

As before, line a baking tray with baking paper,setting aside.

Within his medium bowl, combine everything,mixing well. Put in a tablespoon or two of plain flour if you feel the mixture is too shaggy and difficult to mould.

Using your hands, shape the dough into cookies,baking for 23-25 minutes, till the cookies are a shade of golden,to some degree and cooked through. 

I name this cute cookie Wiold(Wild and oat combined). If you can brainstorm a better name, express your ideas in the comments below.

I've made Strawberry Sprinkle...I've baked Wiold but we need one more to at least create a trio for the Cookie Club. Who else shall conjoin with the two other cookies?

100g of flour(unless you know the alternative of white flour in the UK...)

50g of plain flour

a pinch of baking soda

2 lemons

50g of brown sugar

50g butter 

1tsp of vanilla extract

Method:

Blend all dry ingredients in one bowl. Zest one lemon, gradually add the butter. Carry on adding enough lemon juice to form a dough.

Allow the dough 30 minute resting time.

Briefly flour the working surface,roll out the dough. Use your cookie cutter to staple out the cookies.

Align them onto the baking tray with baking paper. Bake for 10 minutes.


As the cookie require "beauty sleep" before being baked, I name this cool...Sweet Dreams which I find amusing as lemon is the most sour fruit you can consume on its own.
