I've managed to make time to blog and bake for this week's post- chocolate muffins. This is a simple and great recipe for anyone who wants to practice their baking skills and to just enjoy a chocolate treat.
In order to make these muffins, you'll need the following:
250g of plain flour
50g of cocoa powder (I'd recommend the cocoa powder specifically used for baking)
1tsp of baking powder
1 egg
120g of sugar (any kind)
2tbsps of oil
100ml of milk
For the icing:
500g of icing sugar
1/2 - 1 tbsp of warm water
100g Melted chocolate
Equipment needed:
A jug
Free-standing/handheld mixer
Muffin tray
Muffin cases
Method to baking these chocolaty muffins:
Firstly, pre-heat your oven to 160c/320F/Gas Mark 3.
Sieve all dry ingredients into a mixing bowl.
Then mix in a jug: the egg,milk, oil and sugar together until very frothy and well combined. Pour this liquid in with your dry ingredients (you can also add chocolate drops or add broken pieces of chocolate to make your muffins extra-chocolatey). Mix until combined.
Whilst your muffins are cooling, add to a bowl: icing sugar, melted chocolate and a few teaspoons of warm water. The way I made the icing was I gradually added more icing sugar and chocolate to the bowl until I'd used all of the ingredients needed and the icing had a THICK consistency. This may take practise if you want to perfect the right consistency of icing.
Fill a piping bag with your whipped up chocolate-flavoured icing and ice your muffins using the technique I blogged about a month or so ago.
